The foods that we consume from plants comes from the various parts of it. The different parts of the plant that we consume includes - root, stem, leaf, flower, seeds (unripe), and the ripen fruits.
 
Only the edible (eatable) parts of the plants are consumed. 
 
The edible parts of the plant are depicted in the below picture:

Plants are the primary sources of food for animals, including humans.
Why plants are the vital sources of food?
 
Plants produce food on their own through the process of photosynthesis. Green plants are known as producers because they prepare their own food. The food produced is used for their growth and store the excess food in the different plant parts, and the stored food is eaten by animals as food.
We get vegetables, fruits, cereals, pulses, oil, sugar, spices and beverages like tea, coffee and cocoa from the plants. Let us study in detail the plant parts from where vegetables and fruits are obtained.
Vegetables and fruits:
Fruits and vegetables keep the body healthy and fit, and these are obtained from the various parts of the plant. Let us discuss about some of the vegetables that are obtained from the different plant parts.
  • Vegetables obtained from roots: Root vegetables grow under the soil and are roots of the plant which are consumed as vegetables. They generally act as a storage part that stores energy.
Example:
Beetroot, carrot, radishturnip, sweet potato etc., are examples of vegetables obtained from roots.

  • Vegetables obtained from leaves: Plant leaves are eaten as a vegetable. Leaf vegetables mostly belong to the herbs (lettuce, spinach).
Example:
Cabbage, curry leaves, lettuce, spinach etc., are examples of vegetables obtained from leaves.

  • Vegetables obtained from stems: Stem vegetables are food plants from where edible stems are harvested and consumed. The edible stems can be present above the ground or can be present as modified-underground stems. Modified stems serve as a main food storage organ.
Example:
Onion, potato, ginger, garlic, yam, celery, turmeric, kohlrabi etc., are examples of vegetables obtained from stems.

  • Vegetables obtained from flowers: Flower vegetables includes the plants where flowers are used as food.
Example:
Banana flower, cauliflower, broccoli, pumpkin flowers etc., are examples of vegetables obtained from flowers.

Example:
Apple, orange, mango, pears, banana, plum, grapes, melon, pear,  guava, strawberry, cherry and grapes are common fruits consumed in India.

Many plants have more than one edible part.
Example:
1Fenugreek: Edible parts - Stem, seeds and leaves. Seeds after drying are used in cooking, while the stems and leaves of the plant used as a vegetable.
